Cocktails

at morries we find the subject of mixed drinks agreeably intoxicating. using elements of horticulture, history and originality we are in the pursuit of delivering an experience that will expand your senses.

from its medicinal roots, over 200 years ago, bartenders around the world have been instilling passion and innovation into the craft of cocktails.

morries bartenders get their kicks from complementing the world’s best spirits with local produce and house made concoctions. we encourage the spirit of looking outside the box and stepping into a world encompassing an array of moods for every level of drinker.

SUMMER SENSATIONS

these are drinks for the summer season.
they’ll be fresh, fruity and quenching,
but most of all make you wanna shake and dance to some sunshine tunes!

NO RAMOS
flor de cana white rum is shaken dry with kaffir lime leaf, citrus, st germain elderflower and a dash of cream.  then chilled, strained and stirred to a fizz.  kaffir lime sorbet meets a daiquiri! Sort of…

FUZZY FEELING

a fuzzy navel is way 80’s. here we have a similar concoction that’s nothing like it… ya. we mix up peaches, tanqueray gin and apricot liqueur with thyme syrup, orange bitters and citrus fruit garnished with edible flowers. Sure gives us that fuzzy feeling

SUMMER THYME

tanqueray gin is shaken with thyme, lime juice and rhubarb bitters then topped with voyager estates sparkling red grape juice with a sprig of thyme and strawberry on top.  Sweet and sour, a touch fruity with a nice herbaceous layer underneath

SHIMS

“shimmy shimmy ya shimmy yo shimmy yay!” drinks to keep you level, which might sound a bit contradicting to quoted “O.D.B” but shims are something he could have learnt a lesson from had he’d been a morries drinker.  sometimes easing your way up or down is the best option apposed to throttle on or off.

ITALIAN CRUSH

starts sweet and has a great bitter finish. aperol is shaken with freshly squeezed lemon juice, solerno, rhubarb bitters and sugar syrup

MARGARET RIVIERA

fruity summertime sunshine refresher, ok enough with the thesaurus.  vasse felix cane cut semillon reduced with white peach and vanilla pod, then topped with more cane cut semillon, sparkling wine, chopped peach and strawberry

EMBITTERS

zesty squeezed grapefruit, with our bartenders favourite amaro antica formula, is shaken down with campari rhubarb bitters and a pinch of salt.  a nice dry bitter one to quench the thirst

CONTEMPORARY COCKTAILS

something for those of you who demand more sophistication through aromatics and depth in your cocktail experience.  these drinks relate to classical style recipes and let the spirit do the walkin’ n’ talkin’.  but please be cautious as you might not be as great at walking and talking once you’re through with a couple of these!

YE OLD CARDIE

zacapa 23 yr old rum is stirred with antica formula, cardomon syrup, orange bitters, angostura bitters and a zest of flamed orange rind.  this is nicely spiced and warming, a wonderful night cap

SANTA MARIA

think chocolate orange driven by tequila… the berry farms chocolate liqueur is stirred up with 1800 anejo and herradura reposado with a splash of campari to keep it bitter.  this is not for the faint hearted, seriously!

MARTINI, MANHATTAN, OLD FASHION

we also kick ass at making classics and love doing it.  if that’s more your thing try an old fashion, manhattan or martini.

TWISTED CLASSICS

some things are never meant to be F#$%d with, like a martini,  or the song “love will tear us apart” by joy division.  so we’ll stay clear of that, however we do like to tinker quite a bit, and sometimes a wee tinker re creates a classic drink into a modern masterpiece

GOBLIN CO.

chilli infused with nitrogen oxide cazadores blanco tequila with a dash of lime juice coriander and agave nectar shaken with cracked ice makes this the freshest thing your tastebuds have ever had!

BASIL SMASH

a slight twist on the classic recipe has made this a morries favourite.  tanqueray gin, st germain elderflower liqueur, lime juice, some sugar and loads of basil all smashed together makes for a very refreshing quencher

PEDRO’S DAIQURI

alvear pedro ximinez is shaken with kraken spiced rum, lime juice demerara sugar and xocolatl bitters served up then dusted with cinnamon and coffee grind.  a lovely spiced sweet and refreshing drink

BREWSKIES

the original boilermaker was for “cowboys” drinking a shot of jacks in a pint of budwieser.  we’ve come a long way since then.  being beer lovers we took the boilermaker idea and made some gorgeous concoctions and pairings for you to try

JAMES SHRUBS

named after the fella most likely sitting at the bar right now.  we’ve put together a rosemary and ginger shrub shaken with herradura reposado tequila, pineapple juice, st germain elderflower, and a dash of orange bitters.  then we top it up with bootleg’s speakeasy IPA.

BUNNY BOILER

the groves american style whisky and limeburners honey liqueur are stirred with rhubarb bitters and topped with colonial draught for a very floral, pretty aromatic beer cocktail.

PERFECT PAIRS

bootleg raging bull + matusalem grand reserva rum + bahen & co. dark chocolate

sierra nevada kellerweis + hibiki 17 yr old whisky + dried banana chips

MORRIES FAVOURITES

back by popular demand! actually more like if we took them off customers would throw rocks at us.  these are margaret rivers most popular cocktails and already classics here at morries, enjoy the enjoyed

TROPHY WIFE

a perfect balance of sweet and sour with a little pepper to spice her up! pink peppercorn infused wyborowa vodka, lemon, lime and massenez apricot liqueur shaken for a frothy smooth finish

TART GIN COOLER

an option for all you gin and tonicers out there.  tanqueray gin and aperol are split with squeezed pink grapefruit, topped with a dash of peychaud bitters, splash of tonic and fresh basil.  There’s no hint of sweetness in this one, it’s tart, full of gin, and refreshing.

THE RUM BOAT FLOAT

by far the most favourite of morries drinks.  lemon, lime demerara sugar and passion fruit are shaken vigorously with matusalem classico rum and a dash of maraschino liqueur then strained over ice into a jar.  Very tiki, very rum

MOCKTAILS

driving? feeling a little prego? or not old enough to drink? you can still join the fun and be lookin fly with one of our tasty combinations
